Peanut Asian Slaw

I’m a sucker for slaws and cabbage in general, and most people don’t realize slaw doesn’t have to slathered in mayo (even though that is delicious as well). Here’s an Asian slaw I came up with to have with my fish tacos!

1/2 head green cabbage, thinly sliced or shredded
5 sweet mini peppers, thinly sliced
1/4 c honey
1/4 c oil
1/4 c rice vinegar
1 tbsp soy sauce
1 tsp sesame oil
2 tbsp peanut butter
1 tsp salt
1 tsp Sriracha sauce
1 tsp ground ginger
1 tbsp garlic, minced

Mix all ingredients except the cabbage and peppers in a bowl until honey and peanut butter are dissolved. Pour dressing over cabbage and peppers and toss to coat. Set aside to marinate for at least 20-30 minutes before serving. Add more salt as needed. 

This is great as a side or in Asian Lettuce Cups or Tacos!
