Peach Mango Fish Tacos

Everyone loves tacos and sometimes you want something lighter like fish tacos. Here’s a pretty simple recipe to try out with a sweet salsa to put on top.

Fish

4 Tilapia Fillets, cut into quarters
1/2 c Flour
1/4 tsp Chili Powder
1/2 tsp Paprika
1/2 tsp Cumin
1/2 tsp Ginger
1 tsp Salt 
1/4 tsp Pepper


Peach Mango Salsa
1 Peach, halved & pitted, chopped
1 c Frozen Mango, thawed, chopped
2 sweet mini peppers, chopped
1/4 red onion, chopped
1/4 tsp cumin
1/4 tsp chili powder
1/4 tsp paprika
1/2 tsp salt
8 Corn Tortillas
1 tbsp butter
Coconut Oil

Chop the peach, mango, mini peppers, and onions and combine in a bowl. Season with cumin, chili powder, paprika, salt, and pepper. Set aside to allow flavors to marry.

Combine flour and spices for fish together, using a fork to stir the seasonings evenly. Toss tilapia in the flour mixture.

Heat over medium heat enough coconut oil in a frying pan for a quarter-inch to a half-inch of oil at the bottom. Once shimmering, cook tilapia in batches so as not to crowd the pan and cook until golden brown 2-4 minutes per side. 

Heat butter in a frying pan and warm up tortillas 1 or 2 at a time to serve. 

Place 2 pieces of tilapia in each tortilla and top with the Peach Mango Salsa. Enjoy!
