Banana Coconut Bread

So this was a request by the bf that I make his mom’s Banana Coconut Bread and I got a photo of a cookbook recipe. I have no idea what book its from, so I’m sorry for not giving proper credit, and I only got the list of ingredients so I just had to wing the rest of the directions. I had to modify a couple ingredients as well since I didn’t have regular milk and only had almond milk. He ended up really loving how it turned out. For me it was a bit thicker and denser than normal Banana Bread for me but he said it turned out just like how his mom makes it, so I take that as a win!

Banana Coconut Bread

Banana Coconut Bread

1/3 c Butter, softened
2/3 c Sugar
2 Eggs
3 Tbsp Almond Milk
1 tsp Lemon Juice
1/2 tsp Almond Extract
2 c AP Flour, sifted
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 c Mashed Ripe Bananas
1 c Flaked Coconut, toasted

Preheat the oven to 350 degrees F.
Toast coconut in a dry non-stick pan for 1-2 minutes constantly moving it around so it doesn’t burn. Remove from heat and let cool.
In a medium bowl, mix Flour, Baking Powder, Baking Soda, and Salt. Sift together.
In a large bowl, cream Butter and Sugar. Mix in Eggs, Bananas, Almond Milk, Lemon Juice, and Almond Extract.
Stir in Flour mix a third at a time, until just combined. Fold in the toasted Coconut.
Pour batter into a prepared 9×5 baking pan. Bake for an hour. Poke with a toothpick and if it comes out clean it is done.
Let cool slightly before cutting, about 10 minutes.
